Ipu now drys for 2 weeks or so at which time the top is cut off and it is filled with coffee. After another 6 weeks the coffee and innards are removed, and stink, perhaps where it's name comes from. And so then the the coffee has stained the areas where the skin was not carved off. This ipu is shown finished in a later post.
